Francis told me that he had recently tried a type of clams (think is from Taiwan), which were very nice. I went CDHK for lunch just now with my wifey and his chef steamed the clams with garlic. The clams were fresh and succulent, tasted better than the typical tua tow. He is still trying to source for the supplier so it is not in the menu at this juncture.

The next dish we tried was the Steamed Live Tiger Prawns, which were also very fresh and succulent, tasted yummy with the light soy sauce with red cut chilli and sliced ginger.

The Country Tofu was tasty as usual.

Yup, the prawns were steamed plain, so can taste the freshness.

It is another good way to eat this fresh calm with fried galic and soy sauce. Ijeff has tried the way we used to steam bamboo clam with garlic. Both are equally good !
